Pazo Cilleiro combines nature, tradition and a spirit of modernity. The wine which represents our own way of understanding the Rías Baixas: a lively personality full of nuances and flavors.
It brings a touch of sophistication to be served alongside cuisine based on fresh produce from the sea.

Very lively pale gold, with greenish reflections.

Nose

Extraordinarily intense, with very clear notes of citrus fruit and white fruit (pears, apples, white peaches).

Mouth

Vibrant, agile and fresh. Flavor of shiny, juicy fruit. It presents the typically subtle structure of the Albariño variety.

Aftertaste

Complete, persistent, pleasantly refreshing.

Elaboration

Grape harvest

By hand, in small boxes. This year’s harvest, earlier than usual, mainly took place in the first two weeks of September.

Fermentation

14 days in stainless steel tanks

Crianza

Part of the wine was kept in tanks for several months with its fine lees; the rest was put in French and American oak barrels for 6 months, after which the two parts were put back together. The fine lees give
the wine greater texture in the mouth and add to the wine’s freshness.

High quality vineyards around the winery, in Val do Salnés (Pontevedra).

Climate

Oceanic, with gentle average temperatures and very high rainfall (over 1,500 mm/year). The 2020 vintage enjoyed regular weather and a warm, dry end-of-cycle which helped the harvesting. The grapes entered the winery in optimum sanitary condition.

Granite origin, quartz-rich with sandy texture.

From delicious oysters to prawns and langoustines, seafood harmonizes perfectly with the fresh minerality of this Galician white wine. Seafood dishes, like paella and fideua, bring out all the flavors of the sea and complement the textures of these dishes.

Ready-to-eat products such as sushi and smoked fish are enhanced by the refreshing acidity of Albariño which balances out their oiliness. Salads, including fruit-based salads, benefit from the liveliness of Albariño which provides a fruity, refreshing touch.

Cold tapas, salads and vinaigrette-based dishes are surprisingly in tune with this wine, as its acidity brings out their flavors and cleans the palate between mouthfuls.
